Ingredients
  • 1 cup rice flour
  • ½ cup all-purpose flour
  • 1 cup coconut milk
  • ½ cup sugar
  • 2 large eggs
  • 2 tsp baking powder
  • Banana leaves (optional, for lining)
  • Salted eggs and grated cheese (for topping)
Instructions
  1. Preheat Oven: Set to 375°F (190°C). Line baking pans or molds with banana leaves, lightly greased.
  2. Mix Batter: In a bowl, combine rice flour, all-purpose flour, baking powder, and sugar. Add coconut milk and eggs, mixing until smooth.
  3. Pour and Bake: Pour the batter into the prepared molds.
  4. Top with slices of salted egg and grated cheese. Bake for 20-25 minutes, or until a toothpick comes out clean.
  5. Serve Warm: Brush with butter and sprinkle with more cheese, if desired. Best enjoyed warm with hot coffee or tea.
