Bibingka
Ingredients
- 1 cup rice flour
- ½ cup all-purpose flour
- 1 cup coconut milk
- ½ cup sugar
- 2 large eggs
- 2 tsp baking powder
- Banana leaves (optional, for lining)
- Salted eggs and grated cheese (for topping)
Instructions
- Preheat Oven: Set to 375°F (190°C). Line baking pans or molds with banana leaves, lightly greased.
- Mix Batter: In a bowl, combine rice flour, all-purpose flour, baking powder, and sugar. Add coconut milk and eggs, mixing until smooth.
Pour and Bake: Pour the batter into the prepared molds.
- Top with slices of salted egg and grated cheese. Bake for 20-25 minutes, or until a toothpick comes out clean.
- Serve Warm: Brush with butter and sprinkle with more cheese, if desired. Best enjoyed warm with hot coffee or tea.
