1-2 cups tamarind paste or fresh tamarind (or sinigang mix)
4 cups water
1 radish (labanos), sliced
1 eggplant, sliced
1 bunch kangkong (water spinach)
1 medium green bell pepper, sliced
1 tbsp fish sauce (patis)
Salt, to taste
Instructions
Cook Pork: In a large pot, combine pork, onion, tomatoes, and water. Bring to a boil and simmer until pork is tender (about 45 minutes).
Add Tamarind and Vegetables: Add tamarind paste or fresh tamarind. Stir in the radish, eggplant, bell pepper, and green chilies. Simmer until the vegetables are cooked.
Season: Add fish sauce, salt, and adjust the sourness with more tamarind if needed.
Serve: Add kangkong just before serving, then remove from heat. Serve with steamed rice.
