Sinigang

Ingredients
  • 500g pork belly or ribs, cut into pieces
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 1-2 long green chilies (optional)
  • 1-2 cups tamarind paste or fresh tamarind (or sinigang mix)
  • 4 cups water
  • 1 radish (labanos), sliced
  • 1 eggplant, sliced
  • 1 bunch kangkong (water spinach)
  • 1 medium green bell pepper, sliced
  • 1 tbsp fish sauce (patis)
  • Salt, to taste
Instructions
  1. Cook Pork: In a large pot, combine pork, onion, tomatoes, and water. Bring to a boil and simmer until pork is tender (about 45 minutes).
  2. Add Tamarind and Vegetables: Add tamarind paste or fresh tamarind. Stir in the radish, eggplant, bell pepper, and green chilies. Simmer until the vegetables are cooked.
  3. Season: Add fish sauce, salt, and adjust the sourness with more tamarind if needed.
  4. Serve: Add kangkong just before serving, then remove from heat. Serve with steamed rice.
