Tapsilog
Ingredients
- 500g beef sirloin, thinly sliced
- 5 tbsp soy sauce
- 3 tbsp calamansi juice (or lemon juice)
- 3 cloves garlic, minced
- 2 tbsp sugar
- 1 tsp ground black pepper
- Cooking oil
- 3 cups cooked rice (day-old is best)
- 3 cloves garlic, minced
- Salt, to taste
- 2 eggs, fried sunny-side-up
- Atchara (pickled papaya, optional)
Instructions
- Marinate Beef: Mix soy sauce, calamansi juice, garlic, sugar, and pepper. Marinate the beef for at least 2 hours or overnight
- Cook Tapa: Heat oil in a pan. Cook beef until tender and slightly caramelized.
- Make Sinangag: In the same pan, sauté garlic until golden. Add rice and stir-fry until well mixed. Season with salt.
- Assemble: Serve the tapa with fried rice, eggs, and atchara.
