Ingredients
  • 500g beef sirloin, thinly sliced
  • 5 tbsp soy sauce
  • 3 tbsp calamansi juice (or lemon juice)
  • 3 cloves garlic, minced
  • 2 tbsp sugar
  • 1 tsp ground black pepper
  • Cooking oil
  • 3 cups cooked rice (day-old is best)
  • 3 cloves garlic, minced
  • Salt, to taste
  • 2 eggs, fried sunny-side-up
  • Atchara (pickled papaya, optional)
Instructions
  1. Marinate Beef: Mix soy sauce, calamansi juice, garlic, sugar, and pepper. Marinate the beef for at least 2 hours or overnight
  2. Cook Tapa: Heat oil in a pan. Cook beef until tender and slightly caramelized.
  3. Make Sinangag: In the same pan, sauté garlic until golden. Add rice and stir-fry until well mixed. Season with salt.
  4. Assemble: Serve the tapa with fried rice, eggs, and atchara.
